The countdown is well underway to next month’s eighth edition of the Scottish Chefs Conference. As always the event, which is sponsored by The Staff Canteen, has a host of culinary talent on offer for visitors to the Thistle Hotel in Glasgow on 4 November. Among the line-up is Geoffrey Smeddle from Michelin-starred The Peat Inn. Looking ahead to the event he said: “I was shocked to be asked to be honest. I enjoyed going to the conference just to watch so it is going to be strange to be on the other side of the fence. “I am very excited but a bit intimidated too and it will be a great experience for me to cook in front of the big audience.” Also set to perform on stage are Jeremy Medley, Ramon Morato, Zak Miller, Gary McLean and Great British Menu star Daniel Clifford. The event is designed to show chefs knowledge and techniques as demonstrated by some of their most widely respected peers but it is also a great chance to make contacts with suppliers. Event organiser Willie Pike MBE has seen the Scottish Chefs Conference grow since he first held it in 2006. He told The Staff Canteen: “In regard to our profession this is the highlight of the year for me. The objective of the first one was to try and establish a chef conference in Scotland. It was a bit of a no man’s land where none of the chefs ever spoke to each other. Suppliers would send in a brochure and chefs would just throw it in the bin! “But now chefs come to the conference and learn great skills and modern techniques.
