Roux at Parliament Square, headed up by MasterChef Professionals winner, Steve Groves, is to undergo an exciting refurbishment this summer to enhance its elegant 1920s feel and introduce more modern influences to give it a contemporary lift. The fine-dining restaurant and bar, set in a beautiful Grade II listed building in the heart of Westminster, also played host to finalists in the recent series of MasterChef.
Steve Groves, along with Michel Roux Jr., Restaurant Associates, and Rosendale Design, have come together to design a new look that is fitting for the restaurant housed in the stunning Georgian building designed by Alfred Waterhouse, the architect of London’s iconic Natural History Museum.
Following the re-design, Roux at Parliament Square will perfectly mirror Steve Groves’ style of cooking – classic, with a modern approach. Panelling will line the walls of the restaurant to enhance its historic feel, whilst up-to-date grey and teal finishings will modernise the space. The focal point will be an impressive wine display covering the back wall, which will be visible to passers-by through the grand windows at the front of the building.
The lighting will also become a feature throughout the restaurant, with layered lighting used to create a warm and homely atmosphere. The homely theme, inspired by the townhouse style of the building, will continue to the seating, with banquettes in soft, velvety fabrics providing a sense of comfort and luxury for diners.
Steve Groves, Head Chef at Roux at Parliament Square, commented: “Being involved in the new design of the restaurant from the outset has been an exciting experience. I have been able to put my stamp on it and ensure the look and feel of the restaurant perfectly reflects my food and the service guests receive. Roux at Parliament Square has always been a beautiful place to work and this refurbishment will further enhance the atmosphere in the restaurant and bar.”
Michel Roux Jr., world-renowned chef and consultant for Restaurant Associates, added: “Roux at Parliament Square has an elegant feel, which is perfectly fitting for the building it is set in and the experience diners receive. However, with Steve’s dishes bringing a wonderful, modern touch to the restaurant, we knew it was time to do the same to the décor.”
Dale Atkinson of Rosendale Design, commented: “During the initial research stage of this project we were fortunate enough to find an original photographic survey of the building, and from this, we immediately knew that we wanted to reinstate some of the historical features – but with a progressive twist. This will allow us to create a contemporary space, with a nod to the past, which we hope will nicely complement the menu.”
Roux at Parliament Square will be re-launching on 4th September 2017, following closure during August to allow for the work to take place. Guests to the restaurant will enjoy choosing from Steve’s carefully curated, seasonal Tasting and Set Menus, which will include dishes such as: Dartois of veal sweetbreads with corn and girolle mushrooms, Dorset crab with apple dashi, and Pear with chamomile, heather honey and pistachio. All ingredients are sourced with care by Steve and his team from the very best suppliers around the country, including: Herdwick lamb from Lake District Farmers, cheese from La Fromagerie, and scallops from Keltic Seafare.
