Ingredients

  • Fish stock roasted
  • Good for fish and brown butter
  • Caramel and fish
  • Sunflower oil
  • 5kWhite fish bone and trimming wash and dried
  • Leek
  • Carrots cleaned not peeled
  • Shallots
  • Onion
  • celery
  • Lemon half
  • Fennel optional
  • White wine
  • Bouquet garni
  • Head garlic optional
  • Chervil optional
  • Star anis optional
  • Cold water

Method

Roast the fish bone in a stock pot in the oil when lightly browned add the veg
And cook for another 5 min and then de glaze with the wine cook un till the cent of alcohol has gone and add the water just to cover bring to boil and reduce heat add the rest and cook until for 30 min pass and cool
(skim when needed)
