  • Egg yolk and cep oil vinaigrette
  • 10 eggs
  • 90 g cep oil

Method

Poach the eggs for 30 min at 65° and cool down.
Pull the egg yolk from the egg and pass it through a strainer.
Add the cep oil to form a vinaigrette.
