Lee Bye replaces Paul Foster at Tuddenham Mill

Lee Bye has been appointed as the new Head Chef at Tuddenham Mill, replacing the outgoing Paul Foster who had been at the helm for four years. The Mill’s new Head Chef Lee is excited about the challenge ahead and he said: “I’m keen to draw a wide customer base within the area and make Tuddenham Mill a strong and viable restaurant used for all occasions, whether it is a snack, Sunday lunch or a special treat. My aim is for all this to be delivered at a high standard and fair price point.” In the past few years Tuddenham Mill’s restaurant has been considered to be one of Suffolk’s finest and Lee is well aware of the establishment’s recent success and what he has to live up to. He added: “My style is very much a boy who has grown up in the country who loves working with the best produce the region has to offer. The food at Tuddenham Mill will be a mix of local and British produce working strongly within the seasons and focussing on taste and balance across the menu.” “I love nostalgia in my dishes and enjoy bringing modern techniques where necessary. I love hearty flavours and that feeling of comfort you get from a plate of food.” Lee will take over from 17 February and he is not just familiar with The Mill kitchen but also how the restaurant has been run after previously working under Paul Foster as sous chef for two years before embarking on a career as a Head Chef.
