Alyn Williams: An interview with the man behind CHEFstock

After announcing the line-up for this year’s CHEFstock, which includes Paul Ainsworth, brothers Peter and Jonray Sanchez-Iglesias and Margot Janse, we caught up with Alyn Williams to find out what he’s looking forward to most.  Alyn Williams at The Westbury London   Why did you decide to start CHEFstock? How many years have you been hosting this for? I like working with different chefs and thought it would be a great idea to run an event where I would invite a mix of British and international chefs to take part in an event at Alyn Williams at The Westbury. We looked at different times of the year too and for me early autumn is my favourite. We have so many wonderful ingredients available, I thought it would be perfect for our guest chefs too to show off their styles of cuisine. Do you have a dream list of chefs that you would like to work with for CHEFstock? Are there any that you would love to have involved but haven’t been able to? I could probably write an endless list of people that I would like to join us for CHEFstock. All of those who are involved would be on that list. I’d like to keep the event going in the future so that I can get as many of those chefs here as possible. Each year I write a list of chefs that I would like to invite to take part. We get a lot of positive reaction and luckily most of the chefs say yes. But the kinds of chefs that we ask usually have busy schedules, so some can’t make it. Have you worked with any of these chefs before? I like to invite chefs that I haven’t worked with before as that is exciting for us to see what different styles each one brings. However I did work with a young Paul Ainsworth at Gordon Ramsay, Royal Hospital Road back in 2002. What are you looking forward to most about this year’s event? I’m really looking forward to working with Paul again as I love his food. The Casa Mia boys will bring an exciting angle too and of course to have Margot Janse here is a great honour, I am really looking forward to seeing her food first hand.
