I hope you are well; here are the week’s offerings from our warehouse
Mushrooms & Truffles
American Girolles are coming in smaller than past deliveries but a little damp and unclean. If you prefer, to keep your menu ticking over we do have frozen graded Girolles, which may be of interest. Grey Chanterelles are still my favourite, coming fromFrance now. They have a brighter yellow stem than their Viking friends and due to colder weather are as sturdy. They are clean, complete and perfectly formed; a great alternative to girolles for pickling.
Trompette de la Mort is them, I am yet to find a recipe to tempt me to eat black food, if you have one please pass it forward. Pied de Mouton also seems to be in full swing after a slow start to the season; now coming from Turkey. Clean, creamy-coloured, complete and firm these are beautiful. I have been taking them home for omelets, which is a nice way to end the day.
We have heard that the South African Cep season has started and we will have them in stock from Monday; they offer a more consistent, cleaner mushroom and completely maggot free. Happy days.
For those who haven’t heard MOUSSERON HAS FINISHED!
We are still working with Italian black autumn truffles but the time has come and black winter Italian truffles will be available next week as a pre-order, the price and quality has balanced out and you can now have the highlight of the truffle year on your menu. Keep updated on twitter to see photos of them as they come in. Italian white truffle is available by pre-order with 48 hours notice; the nose, the flavour and the price is all fantastic. We’ve seen it on the menus at Roux at the Landau, le Manoir and the Sir Charles Napier, all doing great things with this little beauty.

Christmas is coming and the goose has gotten fat. We are now carrying goose in stock.
I have ordered mine for Christmas at the farm – to be served with bacon, sausage and chop.
A quick farm update – the sheep are pregnant and we are expecting lambs in March!
Finally, we would like to say a BIG CONGRATULATIONS to our driver, Saddam, who had a baby boy earlier this week and head of purchasing, Luke, who is getting married this weekend! An exciting time for both of the boys and we wish them both health and happiness for all the adventures that lie ahead.
