Michelin-starred chef Lisa Goodwin-Allen joins The Game Bird team at The Stafford Hotel

From September 2021, Lisa Goodwin-Allen will oversee The Stafford London’s celebrated restaurant, The Game Bird, working collaboratively with the hotel’s Executive Chef, Jozef Rogulski. 


The new menu will showcase the finest British produce and support many British artisan producers, elevating the current offering by drawing on Lisa’s experience from Michelin-starred Northcote in Lancashire. 

Lisa will continue her role as Executive Chef at Northcote, another property within the Stafford Collection, thereby celebrating the culinary talent within the group. 

From 14 September, guests at The Game Bird will be able to begin their dining experience with a selection of H. Forman & Son smoked salmon, served tableside from the restaurant’s bespoke trolley. 

Starters on the new menu will include Gala “Pie”, Pressed Pork, Beer Onions, Brown Sauce; and Lancashire Three Beets, Frozen Dorset Ash Goat’s Cheese, Roasted Hazelnuts. 

To follow, there will be main courses such as Dover Sole, Potted Southport Shrimps, Sea Herbs; Jacobs Cross Lamb, Sticky Belly, Wood Roasted Leek, Sheep’s Curd; Butter-Poached Native Lobster, House-Dried Tomatoes, Basil & Champagne; and Squash Potato Dumplings, Black Cow Cheddar, Pumpkin Seed Granola, Crispy Sage. 

A handful of The Game Bird’s most popular main dishes will also remain on the menu, including the Chicken Kiev; Scottish Venison Wellington; The Game Bird – Roast Squab Pigeon, Buttered Turnips, Apple, Bacon Barley Risotto; and Steak & Ale Steamed Suet Pudding. 

Desserts such as Black Forest Baked Alaska for Two and Crêpes Suzette served tableside will provide the perfect end to a meal at The Game Bird.

A new seasonal cocktail list will be served from the chic Champagne bar in the restaurant, complementing the new menu; perfect for a pre-dinner aperitif.
