Robin and Sarah Gill are delighted to welcome AngloThai to their Clapham restaurants, Counter Culture and The Dairy, for the months of May and June.
AngloThai marries traditional Thai recipes and flavours with modern techniques and seasonal British ingredients, paired with a low‐intervention natural wine program. This is delivered by husband and wife team ‐ John Chantarasak and Desiree West.
AngloThai is John (twice shortlisted YBF ‘Chef of the Year) and Desiree’s own project, a journey that has seen them collaborate with a number of top restaurants and chefs throughout the UK, Europe, Asia and North America.
The pair will take over Counter Culture, The Dairy’s naughty little brother, a small plates restaurant with just 14 stools, which has been offering a rotating world tour of cuisines over the past 12 months. AngloThai’s menu at Counter Culture will change according to seasonality, with some of the dishes to include:
• Brixham Crab & Wild Ramson Broken Rice
• Root Vegetable Som Tam, Salted Duck Egg, Cobnuts
• Duck Hearts, XO Chilli Jam, Three Cornered Garlic
• Salted Monkfish, Frozen Green Apple Nahm Jim
• Thai Donuts & Pandan Leaf Custard
In addition to AngloThai taking the helm at Counter Culture, the duo will also be curating a revolving door of chef friends and wine experts for a series of collaborative Sunday dinners at The Dairy ‐ “AngloThai With Friends” in partnership with TABASCO:registered: Sauce.

“AngloThai With Friends” will be five courses served family‐style, including snacks and a welcome drink. There will be a selection of low‐intervention wines available at each dinner, chosen by a weekly changing expert in the field of wine. Guest chefs will work with John to create exciting menus that showcase their style of cooking with flourishes of AngloThai along the way.
