Following on from the new Food Information Regulations which came in on 13 December we’d like to remind you about Coeliac UK's online catering training which goes through preparing and delivering safe gluten-free food in detail.

The interactive online course takes around an hour and a half to complete and uses films, images and quizzes to help aid learning. It can be taken in a one off sitting or re-visited again and again if you prefer to complete in smaller chunks. Through the module you will learn about understanding coeliac disease, what people with coeliac disease need, why serve gluten-free, the law on gluten-free and managing gluten-free: the basic principles of catering gluten-free encompassing:

o Choosing and using the right ingredients
o Storage
o Preparing and cooking gluten-free food
o Cleaning and personal hygiene
o Communicating with your staff
o Serving gluten-free meals – communicating with consumers
o Labelling your menu.

In a recent eating out survey 93% of our Members agreed that knowing an establishment has taken Coeliac UK ‘s catering training is reassuring. On completion of the course and end assessment you will receive a certificate to print out and display at your venue, demonstrating to your customers that you know and understand how to prepare and safely serve gluten-free food.
