James ‘Jocky’ Petrie confirms return to The Fat Duck Group

James ‘Jocky’ Petrie has confirmed he is back working at The Fat Duck Group on a full-time basis.
Jocky first joined Heston Blumenthal’s The Fat Duck more than 20 years ago, as head of pastry. During his spell at the restaurant, they were awarded the prestigious three Michelin stars.
Jocky then led creative development and the experimental kitchen alongside Heston, before departing to work for the Gordon Ramsay Group.
Confirming his return, Jocky wrote via social media: “I’m happy to share that over the past 10 months, I’ve taken on the role of global culinary director for The Fat Duck Group, overseeing culinary innovation at all our sites.
“Last year, following nearly a decade with Gordon Ramsay Group, Heston Blumenthal and I reconnected. What started as a short-term project turned into something more - a year later I’m still here.
“We realised there were still ideas left to explore, unrealised concepts, and a creative spark reignited. Beyond the food, we’ve begun to reimagine the systems that bring his vision to life.
“Delighted to also announce the return of Simon King, who has taken on the role of managing director, bringing his expertise and leadership to the group once again.
“The restaurant industry has faced extraordinary challenges in recent years, and The Fat Duck group has not been immune. Retaining the stars is always a proud moment - a testament to the huge dedication and excellence of our entire team.
“It has been quite the ride so far…looking forward to the future.”
At this week’s Michelin ceremony, Dinner by Heston Blumenthal also retained its two stars, while The Hinds Head kept its one star.
The Fat Duck in Bray, with head chef Karl Jaques, is now one of 10 three-star restaurants in the country, following Mark Birchall’s Moor Hall being added to the list.
The Ledbury, L’Enclume, Core, Alain Ducasse at The Dorchester, The Waterside Inn, Restaurant Gordon Ramsay, Sketch and Hélène Darroze at The Connaught complete the three-star selection.
