Biography

Director of Culinary Stephen Hayes oversees all dining experiences across the Cashel Palace and Mikey Ryan’s. A member of the team since 2019, Stephen was formerly Head Chef of the Michelin-starred restaurant at The Cliff House Hotel in Waterford and also furnished his skills at the Michelin three-starred Restaurant De Librije in Holland. With a focus on locally sourced produce, Stephen creates menus that reflect the very best of what Ireland and, more specifically, Tipperary has to offer. Stephan was a speaker at the Food on the Edge 2023, a not-for-profit conference seeking to make good food accessible for everyone. Food on the Edge is the brain-child of Dr JP McMahon, chef/patron of Michelin-starred Aniar Restaurant in Galway.

The Bishop’s Buttery opened in 2022; the fine-dining restaurant offers contemporary Irish cuisine, with much of the produce sourced from farmers, growers and artisanal food producers in Tipperary. The restaurant itself is housed within Cashel Palace, which underwent a multimillion-euro restoration project in 2017 following the purchase of the property by the Magnier Family. Dining at The Bishop’s Buttery is an immersive experience. The restaurant's open kitchen allows diners to observe the meticulous preparation of their meals, adding a personal touch to the dining experience. Serving exceptional Irish cuisine with a focus on Tipperary’s rich larder, The Bishop’s Buttery is Cashel Palace’s Michelin-star fine dining restaurant.
