FROM the sunny scenes of san francisco to the snowy scottish highlands, Rodney Wages owns AVERY, A MICHELIN STAR RESTAURANT. 

Avery is a creative restaurant located in a Georgian townhouse in Stockbridge, Edinburgh founded by American chef Rodney Wages. 

 Originally located in San Francisco, Avery earned a Michelin star for its exceptional tasting menus and unique dining experience.

The restaurant was known for its intimate setting and meticulously crafted dishes.

It combines Scottish produce with Californian lightness and bold flavours by showcasing dishes like Orkney scallop dressed with pineapple jus as welll as a diverse drinks flight featuring wine, sake, sherry, and single malt whisky.

Rodney's journey

Rodney moved from Kansas to California to work at The French Laundry. He met many collaborators and a farmer who now supplies produce for Avery Restaurant.

He helped open Benu and worked at Saison and Atelier Crenn, refining his culinary skills.

In 2016, he launched the pop-up RTB, which evolved into Avery Restaurant, earning a Michelin star in 2021.

Rodney fell in love with Edinburgh last year and is now opening a new project there in 2024, bringing his unique culinary perspective to Scotland and celebrating local produce.

Accolades 

The colourful restaurant was awarded with a Michelin star at the 2025 Michelin Star awards in Glasgow earlier this year for its vibrant cooking.

Avery has also received praise from food critics for its creative dishes, impeccable presentation, and overall dining experience.
