Graham Squire took up the role of the executive chef of the Dining Room at The Goring hotel in April 2022.

BIOGRAPHY

Graham trained at Bournemouth and Poole College’s specialised chef programme run by the Royal Academy of Culinary Arts. It was from there that he was sent to train at Claridge’s hotel training under John Williams and Martyn Nail, working his way up to senior chef de partie.  Graham then went on to join the two Michelin-starred Le Manoir aux Quat’Saisons in Oxfordshire under the leadership of Raymond Blanc OBE before leaving to work with Adam Byatt at his Clapham restaurant Trinity. It was at Trinity where Graham worked alongside Tom Sellers, who went on to open Restaurant Story and in 2014, Tom opened his first pub – The Lickfold Inn – near Petworth in West Sussex and persuaded Graham to run the kitchen as head chef.

Graham joined The Goring Hotel as head chef of the Michelin-starred Dining Room in August 2019 and was promoted to executive chef in 2022.

Dining Room at The Goring

The Dining Room at The Goring reopened in March 2024 following an extensive multimillion-pound redesign. This five-red-AA-star hotel’s signature restaurant, which earned its Michelin star in 2016 and has retained it ever since, now boasts a fresh, opulent aesthetic that pays homage to the hotel’s storied history. The revamped space also includes a cutting-edge kitchen and a bespoke chef’s table, offering an intimate dining experience for up to six guests.

The Michelin Guide UK & Ireland 2024 praised The Dining Room as “the epitome of grace and decorum," appealing to those who appreciate traditional elegance, noting that it’s one of the few venues in London where diners tend to dress up. While the restaurant has long been known for serving classic British dishes like eggs Drumkilbo, Graham and his team skilfully incorporate modern techniques and the finest ingredients, creating dishes that demonstrate exceptional balance, flavour, and texture. Dishes that display an impressive understanding of balance, flavour and texture.
