Combi ovens from Rational
Adam Knights, marketing director, Rational UK

Rational’s iCombi Pro combi oven incorporates a range of innovations that deliver up to 50% higher productivity as well as reducing cooking times and energy consumption by up to 10% compared to its predecessor. Four advanced intelligent systems provide unprecedented control over every aspect of the cooking process, allowing operators to prepare a range of different food at the same time with precise results.

For example, its iDensityControl feature intelligently regulates the cooking climate to ensure perfect results are guaranteed, whatever you are cooking. Its optimal cooking climate management means it can even cope with even the most delicate foods. By controlling the airflow throughout the cabinet it eliminates hot or cool spots, so that everything is cooked with absolute consistency, from top to bottom and back to front of the oven.

Meanwhile the new iProductionManager feature allows multiple products to be cooked at the same time, maximising productivity and thus minimising energy requirements.

The iCombi Pro also features the new iCareSystem self-cleaning feature. As well as reducing chemical use by 50%, it delivers a 25% saving on energy during the cleaning cycle, when used in eco mode, compared to the previous model.

Multifunctional cooking systems such as combi steamers are playing a huge role in solving the issue of kitchen space. The iCombi Pro is truly multifunctional. It can be used as a steamer, a convection oven or a combination of the two. It can steam, roast, toast, bake, prove and regenerate. You can cook a full British breakfast in one load, all at the same time. By reducing the footprint of the equipment you also reduce the ventilation requirements which, in turn, reduces the energy needed to run it. The flexibility of these cooking systems means they get used throughout the day, for all cooking requirements. So you buy less equipment, but use it more often – that’s where the multifunctionality of the equipment comes into its own.

Connectivity is increasingly important – our ConnectedCooking platform helps to create a safe kitchen by reducing the number of visits required, since much can be achieved remotely. Cooking program updates, service monitoring, HACCP data – they can all be done remotely, with no need to step into the kitchen.
