SALMON OF KNOWLEDGE Ā  Ā This dish has been something ive been working on for years now , developing as I grew as a chef. I was inspired by the beautiful artwork and story I first read in a Irish Folklore book my father won for English in Institute Sligo when he was in school and from as young as I can remember I was obsessed with Irish myths and legends and this fueled my artistic creativity. Dish is a fine balance of smoked and charred flavours using hazelnut wood and smoked salmon jerky for different textures to recreate the beautiful salmon cooked over fire pit and spicy coral tuille and charred broccoli stem to resemble the fire , barley risotto and salmon roe is representing the river bed to where the infamous fish lived and watercress and nasturuim leaves for freshness, finished with a musscle and citrus foam for sharpness to bring it all together.
