My main problem at the moment is desiding what to level in my cv and what to leave out. My dilema is that, according to the experts I should only use the the last five years. But my current employer is 16 years now and most of my past relavent work experience as a Head chef is anshint history along with oning my own hotel for a short period of time. So so if I only use the up to date work that I am doing, I don't have the chance to get the jobs I really want and my current work mates think I am to old to be a chef de parties, which I am happy to to start off at once more, there's no shame in stepping back in order to go forward. Any help out there. 35 years plus as a chef. Yours MCFA MCGC

I have considered this approach once I have my cv sorted, it does make sense.
