My interview of the UK Pastry team in Paris was republished in the October issue of Chef & Restaurant magazine.  The interview was part of an 8 page article about the UK pastry team and their upcoming challenge in the Coupe du Monde de la Pâtisserie (Pastry World Cup) that is happening in Lyon at the end of January 2023.  For any chef who has sometime free in January, I would highly recommend going at watching the contest.  The event is filmed and shown live on various Television networks (not UK which is a shame) and is full of skill and drama. Many chefs from completing countries go there to support and cheer on thier team.
