Watch Executive Chef Jean Delport of the Michelin-starred and Green-starred restaurant Interlude prepare a Hand-Dived Scallop, Nutbourne Tomato, and XO sauce dish. Highlighting one of his favorite seasonal ingredients, Jean uses a variety of local Nutbourne tomatoes throughout the dish.
