HEFMA Pulse Journey to net zero from Rational

When discussing food waste it is common to focus on patient food but what more could be done to reduce waste in the staff and visitor restaurant?

Comments can be attributed to RATIONAL national sales director Colin Parry.

Foodservice operators are looking at ways to manage and reduce running costs, in every area of their business. In the professional kitchen, advanced cooking systems can help, and not just in ways you might expect. There are the obvious ones, such as energy efficiency. Then there are the less obvious, such as productivity, food yield, food waste and reliability.

“At Rational, we aim to deliver maximum benefits to the customer – including in terms of cost management,” says national sales director Colin Parry. “Our expert chefs have put together some of the key areas where are advanced cooking systems can make a real difference to the bottom line.”

These systems can help reduce food waste, too. For example, the iCombi Pro’s Finishing process ensures that pre-cooked food is regenerated to perfection, delivering top quality results with no wastage.

With conventional ovens, joints of meat will shrink during roasting. In an advanced combi steamer, like the iCombi Pro, shrinkage is minimised thanks to the intelligent monitoring and adjusting of the internal cooking climate – the balance of steam and dry heat. So joints are succulent as well as beautifully browned, and yield is increased. Similarly, in the iVario Pro, the power and speed of the cooking elements locks in juices, for example when searing meat, producing better results as well as a higher yield.

Keeping your appliances running smoothly is a key issue. Breakdowns cost money. Not just calling out an engineer, but also staff time and, potentially, a loss of customer business. A comprehensive, cost effective service package, such as the ones run by Rational, will help you manage costs and minimise down time and the associated costs and stress it brings.

Cooking systems that offer connectivity, such as the Rational ConnectedCooking platform, can enhance reliability. That’s because your nominated Rational accredited service provider can monitor operation and see if something is going wrong. Often they’ll be able to come and sort the problem before the component breaks down. And, since they’ll know what’s wrong, they’ll know the right parts to bring to ensure a first time fix.
