Founders of restaurant and cocktail bar, Boiler & Co., Adam Carr and Cesar Breton,
today announced the soft launch opening for January 2022, located at Canvey Street, London - just a
stone’s throw from the Tate Modern.
Based on a gastro-centric concept, Boiler & Co. focuses in equal measure on its mixologists’
incredible craft and the culinary skills of its famed chef.
Starting out as an idea on the back of a
napkin, Boiler & Co. was born out of a love for caramel-coloured beverages that get their signature
depth and body from the boilers they’re produced in.
Think beer, whiskey and coffee, to name but a
few. Carr and Breton’s dream was to take these traditionally gendered drinks and showcase their
versatility in ways that haven’t been done before. The bold approach will appeal to palates that are
long-standing fans of these flavours, as well as those who have yet to take their first sip.
With roots firmly planted in British soil, Boiler & Co.’s dishes will pay homage to local ingredients
whilst drawing on the global flavour influences that have made London the culinary, cultural capital
of the world.
The impressive menu, serving breakfast, lunch and dinner, is the brainchild of the
celebrated chef of BBC Two’s Great British Menu fame, Kerth Gumbs, and will consist of small,
delightfully eye-catching plates using contemporary cooking methods.
Diners can expect to sample a
taste of Gumbs' Caribbean island home, Anguilla, with dishes such as his crab Johnny cakes served
with scotch bonnet mayo and roe that saw him through to the Great British Menu finals.
Marinated
meat and fish cooked over charcoal or on a robata grill will also grace the menu, and, for dessert,
diners can tuck into sweet touches of unique flavour combinations such as pistachio, stem ginger
and cranberry served with mascarpone.
A La Carte options will see dishes such as grilled ox tongue with crispy potatoes and green
peppercorns as well as roasted scallops with carrot and coconut curry sauce.
Diners will also
experience a carefully crafted tasting menu paired with outstanding cocktails from the mixologists.
When it comes to drinking and dining at Boiler & Co., diners must expect the unexpected.
With final plans for the menu underway, head chef Kerth Gumbs comments: “It has long been a
desire to cook, create and serve food in a place that better reflects my personality.
"Each dish will be
fun, vibrant and tasty. I’m really excited and can’t wait to have everyone experience what Boiler &
Co. has to offer.”
Speaking on the upcoming launch, Adam Carr, founder & managing director, notes: “It has been a
life-long dream to open a place such as Boiler & Co. It will be a genuine space for guests to enjoy and
a place the whole team can be proud to be a part of. After 17 years of working in bars and
restaurants, this project reminds me of how truly passionate I am about the hospitality industry.”
Cesar Breton, Founder, adds: “Boiler & Co. is not reinventing the wheel, but it is carrying out proper
due diligence of how it operates ethically as a business.
"This includes the products we source, our
employment conditions and the businesses we work with. Living and breathing this ethos is part of
our story and is an opportunity to do away with false economies entrenched in the service industry
for generations. We want to appeal to the socially conscious consumer, and we plan on doing that by
creating a personal connection that’s meaningful and authentic.
"We aim to make each Boiler & Co.
guest feel understood and accepted without compromising who they are or their ethics. To us, that’s
what a sustainable and ethical business is all about.”
Boiler & Co. will boast an innovative food and drinks menu, unparalleled service and an ambience
driven by live DJs and entertainment to make every night a unique experience.
The new restaurant and specialist cocktail bar will open in January 2022 for soft launch.
