Golden beetroot with tuna tartare topped with hens egg

Ingredients

  • Golden bettroot (pickled)
  • tuna loin (finely chopped)
  • hens egg
  • spring onion
  • chopped shallots
  • lime juice
  • black sesame seeds
  • creamy horse raddish
  • freshly crushed black pepper
  • salt

Method

1. tuna, spring onion, shallots, lime juice and seasonings mix toghther.
2. Slice the pickled beetroot, arrange on the plate.
3. Place the tuna tartare in the middle of the plate surrounding the carpacchio of the beetroot.
4. Finish it up with sunny side up egg. sprinkle the sesame seed on the top of egg.
5. Pipe the horseraddish cream on each slice of the beetroot.
