In an interview with Code Hospitality's Josh Barrie, the ex-Zuma chef, who was recently hired as the Cream Group's executive, said the restaurant is yet to be given a name, but will be opening in the coming months.
Luxurious and fun
His team is working on a menu which will be "very fun and opulent for Mayfair," with no set theme other than "sexy and delicious." Expect to see King crab, tacos, sashimi, scallops, fish and chips "with a twist" - as, in posh - and "caviar everywhere," all reliant on Toby's solid network of suppliers in the capital.
As well as building the team for his new venture, the chef is working on the food offering across The Cream Group's many outlets - which include The Windmill in Soho, Brompton Road's Ours, and the Cirque Le Soir nightclub.
A new menu will go live at Ours next week, which Toby has streamlined to help ensure "the chefs get things spot on," with other redesigns to follow.
“The group is huge and wants to get bigger," he said. "There are plans to expand, and I’m here to make sure there’s the same consistency throughout the brand so that the food is on point."
Toby left his position of head chef at Zuma in March, having joined the business after leaving Elystan Street in 2020. Prior to this, he worked at The Square under chef Phil Howard, following the chef when he left to open his own restaurant.
