Nathan Outlaw is hoping to spread the word about his Cornish cuisine as he heads to Singapore next month.
He will be showcasing his talents alongside some of his team from Outlaw's Fish Kitchen, as part of 4XFOUR, Singapore’s full service pop-up restaurant which brings together gastronomy and the world of visual art. It is offering guests the opportunity to sample four distinctive cuisines over a four week period by each four world renowned chefs.
“They’re trying to bring chefs from all over the world that they think will do well in Singapore," explained Nathan. "We want to showcase Outlaw’s Fish Kitchen. Our philosophy is to create dishes from the local seafood, wherever that may be. So we’ll take the seafood in Singapore and adapt our menus accordingly. It’s quite exciting for us because we get to use lots of new ingredients and it’s going to be different from the day-to-day work in England.”
This year’s 4XFOUR pop-up restaurant will be at the Temasek Suite in the F1 pit building. The room was specially built as the Prime Minister’s hospitality suite during the Singapore Grand Prix. It is an exclusive venue and, as Nathan told us, 'it is quite futuristic'.
Nathan is passionate about his food and with the recent recognition of Outlaw’s Fish Kitchen in the 2015 Michelin guide, he is keen to test the water overseas.
He said: “We wanted to put the English restaurant into Singapore. They want to see the dishes that we do in Cornwall.”
Singapore is one of the world’s major commercial hubs, with the fourth biggest financial centre and one of the five busiest ports. Nathan was keen to express that 4XFOUR, as well as the commercial benefits, has presented a chance to visit this remarkable city-state.
He said: “I want to go and see what Singapore’s all about. I know plenty of chefs who’ve said it was a good thing to do, good fun and good for business. I’m in a position where I can semi-close the restaurant and take a lot of the guys with me. It’s nice to do things like this, it’s a once in a lifetime opportunity for a lot of us.”
After this year's successes Nathan is keen to reward his team for all their recent hard work and it's not the first time they've ventured overseas.
“In March we took some guys to the Melbourne food festival," explained Nathan. "We enjoyed it so much and the guys got so much from it that I thought, if we’ve got time, it’s a nice thing to do to reward the guys for all their hard work.”
4XFOUR is a sit-down dining affair in a casual and fun setting. Guests will be able to experience exquisite brunch and dinner menus. The dining hall will also feature art installations and an extensive drinks menu. Nathan Outlaw will be hoping to join the likes of Tom Kerridge and Jason Atherton in taking his success to Singapore.
