Current place of work, position and a brief overview of where you have worked before.

I work as the executive chef at the F&D Kitchen and Bar in Lake Mary, Florida. I've also worked at the Forty 1° North Hotel in Newport, Rhode Island and The Porch in Winter Park, Florida.

What is your cooking style and what can people expect from the food on your menu?

My cooking style is more American food, with a touch of French and Caribbean since I was born in Puerto Rico. People can expect a lot of new cool food on my new menus - fresh fish, the best quality of meats and always the freshest produce from Florida.

How do you use social media as a chef? Do you ever post any personal content or opinions – why/why not?

I love sharing my passion for cooking with the world on social media as pictures and videos. I always want people to see that I work hard at my art. I also share pictures of my beautiful family and our amazing time spent together.  

What do you like about The Staff Canteen app and website? 

I love your passion for cooking - amazing chefs around the world working together to create better kitchens. I think that is awesome. The Staff Canteen website is really cool. I love all the work pictures, videos and all the food is always great.

What is your favourite dish to cook?

My favorite dish to cook is our 6-hour braised short rib, served over root vegetable mash, conserva mushrooms, rainbow carrots, crispy onions and natural juice.

Guilty pleasure: list food item / dish / ingredient that aren’t considered ‘cheffy’ but you love to eat

Nachos, burger, pizza or hot dogs!

What are your plans for the future?

For now, my plans are keep working hard and learning everything that I can. In the future, I would like to become a part owner where I work or open my own kitchen.
