Current place of work, position and a brief overview of where you have worked before.
As of now, I freelance a lot, doing cooking events and trying to inspire people to be more creative with food. I also work as sous chef at the newly opened Restaurant NOI in Stockholm, Sweden. Before this I have worked at Winterviken, Oaxen, Saiko and Slottsträdgårdens Kafé (all in Sweden).
What is your cooking style and what can people expect from the food on your menu?
My cooking style is evolving as time goes, but at the moment, I like to keep things simple, letting the ingredients speak for themselves but most importantly making sure that the flavours are on point. I'm still quite young (22) so I still feel like there is a lot left to learn, and lately my obsession has been to find my own way of plating - keeping it clean, nice and elegant on the plate.
How do you use social media as a chef? Do you ever post any personal content or opinions – why/why not?
I mainly use it as a way to express my creativity and to challenge myself to do better. Almost all of my plates on my Instagram (@filipp8n) are made by me at home in my apartment, so if I can do it in my small apartment... so can you! All I want is to basically inspire people to be more creative with food. That’s the truest meaning of my page. Yes I do post personal content, my beliefs and what I stand for.
What do you like about The Staff Canteen app and website?
That it's all about food - no fuzz, just food and the chefs behind it. I really appreciate and love the way you guys lift up and celebrate young chefs around the globe. I feel like it’s a great motivation, for both me personally as a young chef, and for all the young chefs out there!
What is your favourite dish to cook?
Sushi and tacos!
Guilty pleasure: list food item / dish / ingredient that aren’t considered ‘cheffy’ but you love to eat
- Ben & Jerry's cookie dough ice cream - Coco pops (cereal with milk) - Milkshakes
What are your plans for the future?
My plans for the future is to keep being at it, always trying to improve and staying curious. And I would love to keep inspiring people… After all - food is life!
