Chef Tony Parkin leaves Michelin-starred Cliff House Hotel

The Staff Canteen

Tony Parkin has left his role at the Michelin-starred Cliff House Hotel in Waterford, after more than two years as chef patron.

The restaurant celebrates British and Irish cuisine, Tony joining 2022 with a background in Michelin-starred restaurants in Paris, London and Copenhagen.

Taking to Instagram to announce his departure over the weekend, Tony wrote: “After an incredible two-and-a-bit years, today was my last day at the Cliff House Hotel and at the House restaurant.

“What an incredible journey full of ups and downs.

“The biggest thanks to the best right hand man chef James Freeman, you have been a godsend and everything we have achieved together is mainly down to you!

“A massive thanks and lots of love to Laura Thumwood, who has been by my side all the way through this journey!

“Aisling Shanahan and Mateusz Kazmierski, you two have been nothing but amazing and I love you dearly!

“Also thank you to all the staff. Keith Moroney, Greg Fijalkowski and Bartosz Miechowiak, you boys are heroes.

“Also to all the chefs in Ireland that welcomed me with open arms, you’re legends and I will miss you all.

“I’m off on holiday now and a bit of time off! Big love.”

In his time at Cliff House, the hotel was awarded a Michelin Key, whilst the restaurant earned a star in both the 2023 and 2024 Michelin guides.

Prior to his move to Ireland, Tony worked at the likes of Noma, Restaurant Gordon Ramsay, Northcote Manor and The Tudor Room, as well as competing on BBC’s Great British Menu.
