Aaron Potter joins Elystan Street as head chef
Michelin-starred chef Phil Howard has announced on Instagram that Aaron Potter will be the new head chef at Elystan Street replacing Toby Burrowes who left in February 'due to a professional difference of opinion'.
Aaron joins the team from La Goccia, the Italian-inspired restaurant at Petersham Nurseries Covent Garden - he was previously at the acclaimed restaurant Trinity in Clapham where he worked his way up to Senior Sous Chef under Head Chef Adam Byatt.
On his new head chef Phil said: "Having honed his skills under the watchful eye of Adam Byatt, himself an exceptional chef and great mate, he is above all else a truly great craftsman who brings both a wealth of classical experience and a fresh, creative and youthful approach to both cooking and running kitchen.
"In Aaron we have a chef of rare ability and one who leads, inspires and motivates the kitchen in exactly the way we would like it to be done in 2020 - with great care taken over the food, the ethics of its production and the kitchen team itself."
Phil opened Elystan Street with Rebecca Mascarenhas and it won its first star in the Michelin Guide 2018.
He was Head Chef and co-owner of The Square when it opened in December 1991, and saw the restaurant move in February 1997 to its current address in Mayfair from its previous site in St James’. Prior to founding The Square, he worked with Marco Pierre White at Harvey’s, Simon Hopkinson at Bibendum and with Roux Restaurants Ltd.
