Member of the Month November 2023: Kayne Mather
Here at The Staff Canteen, we feature a different member every month we think deserves to be celebrated - this month’s winner is Kayne Mather.

Current Place Of Work/Position?
Sous Chef at Nottingham College's Fletchers Restaurant city hub campus.
What is your cooking style and what should people expect from the food on your menu?
My cooking style is fine dining using seasonal and local produce.
What is your favourite dish to cook and why?
Chilli and honey glazed pork with pickled torched pineapple.
I made this dish as an experiment not knowing if it would work but surprisingly it's now a family favourite.
Name a food item/dish/ingredient that isn't considered "cheffy" but you love to eat?
Sauerkraut.
What do you like about The Staff Canteen app and website?
I like the regular updates on trends and events in the catering industry.
As well as getting inspiration for ideas and seeing the way others chefs work and the amazing food that's out there.
What are your plans for the future?
I plan to keep absorbing as much knowledge as possible around different cuisine.
I also want to learn more about the industry further my skills and knowledge.
What would you like to see done differently in the industry?
I would like to see further diversity and tolerance within the industry.
