Here at The Staff Canteen, we feature a different member every month we think deserves to be celebrated - this month’s winner is Keith Mahoney.

Current Place Of Work/Position?
Head Chef at Lion & Lamb in Dunmow.
What is your cooking style and what should people expect from the food on your menu?
I love to use everyday ingredients in different ways to show new depths of flavours and suprise people, beauty in simplicity, I prefer not to use too many components in one dish.
What is your favourite dish to cook and why?
I've always struggled with this question!
In all truth I can't pick just one thing but I do tend to favour shellfish, I love showing new chefs the ropes when it comes to the prep.
Name a food item/dish/ingredient that isn't considered "cheffy" but you love to eat?
My wife's corn beef hash is one of my favourite things to eat after a long day, it never gets old.
What do you like about The Staff Canteen app and website?
So easy to use and see what other chefs have been up to, it's great to have a place just for chefs.
What are your plans for the future?
Right now at the Lion & Lamb I am just getting started with lots more work to do but one day I'd love to own my own restaurant.
Which chefs inspires you the most and why?
Anthony Bourdain for his love of trying new things!
It's very important to me that people keep an open mind when cooking and his opinions on food share alot of common ground with my own.
