BIOGRAPHY
Simon Rogan's career is distinguished by his focus on farm-to-table cooking, sustainability, and using local ingredients. His influence in the culinary world is marked by a series of successful restaurants, including the renowned three Michelin starred restaurant L'Enclume in the Lake District. Rogan’s philosophy centres around the deep connections between land, food, and flavour, which is evident in all his culinary endeavours.
Charlie Tayler now leads the kitchen at Simon Rogan's Aulis London, where he won a Michelin star in the Michelin Guide 2024. After working in some of London’s toughest kitchens, Charlie travelled to Japan to master his skills. He returned to the UK a year later to lead the kitchen at Simon Rogan’s 12-seat chef’s table restaurant, Aulis.
He lives and breaths cookery, entering the kitchen at 14, getting fine dining experience under Matt Gillan at The Pass at South Lodge, Alyn Williams’ team at The Westbury and Brett Graham at the now three Michelin star restaurant, The Ledbury.
