Biography

Seamus Sam is the head chef at Evelyn's Table in London and has rapidly made a name for himself in the culinary world with his exceptional skills and innovative approach to cuisine. His leadership at Evelyn's Table showcases a remarkable blend of creativity and precision, drawing on his rich background in some of the UK's most esteemed dining establishments.

Seamus started his culinary journey working for Tom Aikens at his flagship restaurant on Elystan Street in 2012, then worked at two Michelin-starred restaurants, The Clove Club and Restaurant Story, before returning to  Michelin-starred Muse by Tom Aikens as head chef in 2019.

Evelyn’s Table

The 12- seater restaurant in the basement of The Blue Posts Pub, on the edge of Soho and Chinatown, is accessible via a dimly lit, narrow stairwell leading to a door marked 'private.' 

The restaurant is renowned for its small-scale, exclusive ambience, featuring just twelve seats arranged around a chef's counter. This setup allows diners to engage directly with the chefs and observe the intricate preparation of each dish, fostering a sense of involvement and intimacy that is rare in the dining scene. The setting is designed to feel both cosy and exclusive, providing a stage for a truly immersive dining experience.

Shortly after being listed in the Michelin Guide in November 2021, the restaurant was awarded a star in the 2022 Guide for Great Britain and Ireland and has retained it ever since.

In April 2022, the restaurant ranked third in Square Meal's Top 100 Restaurant Awards for London.

The menu

Evelyn's Table's menu showcases a modern European approach, with a particular focus on the finest seasonal ingredients sourced from across the UK. The menu is concise but carefully curated, typically consisting of a set tasting menu that changes frequently to reflect the best of the season’s offerings. Dishes are crafted with precision and artistry, highlighting the natural flavours and qualities of the ingredients. The menu often features fresh seafood, handmade pasta, and a variety of meats, all prepared with innovative techniques and a keen eye for detail.
