Josh Overington is the chef-owner of Mýse in Hovingham, York, a restaurant acclaimed for its focus on local and sustainable cuisine. Josh's culinary approach highlights a connection to the region's heritage and produce.
Biography
Josh worked at the Michelin-starred The Pipe and Glass in Beverley and the three Michelin-starred Waterside Inn before enrolling in formal training at Le Cordon Bleu in Paris.
After graduating, Josh spent a brief time at the world-famous three Michelin starred Pavillon Ledoyen in Paris with chef Yannick Alleno before working as a private chef in the French Alps where he met his now-wife, Victoria.
Josh and Victoria returned to Josh’s native Yorkshire, where Josh went to work as sous chef in Michael O’Hare’s Blind Swine. When Michael left the Blind Swine, the couple took over the lease in February 2014 and Le Cochon Aveugle was born. The restaurant served a blind tasting menu only, with a friendly, down-to-earth neighbourhood vibe.
In 2019, it made it into the National Restaurant Awards top 100 for the first time.
In July 2022, Josh announced that Le Cochon Aveugle would permanently close later that year and in 2023, it was confirmed that Josh and Victoria would open Mýse.
Mýse
Situated in the picturesque village of Hovingham in Yorkshire, Mýse operates from a beautifully restored building. The restaurant is recognised for its commitment to a 'farm-to-fork' philosophy.
Mýse's menu, which evolves with the seasons, integrates traditional British cooking techniques with modern influences, while supporting local farmers, artisans, and producers.
Josh and his team champion the very best small-scale producers and farmers in Yorkshire and beyond in the British Isles, with regenerative farming and sustainability at the heart of everything they do. The team forage, ferment and infuse to create their cocktails, non-alcoholic drinks and snacks to complement the menu.
Locally-reared meats are dry-aged and cured in-house as well as home-made charcuterie. The restaurant features an open kitchen, enhancing guest engagement and emphasising the connection between the chef, his team, and the diners.
Mýse gained a Michelin star in The Michelin Guide UK and Ireland 2024.
