Mark Birchall's culinary journey began early in life, growing up in the lush countryside of Lancashire, where he developed a deep appreciation for locally sourced, seasonal ingredients. His passion for cooking led him to train under some of the world's most renowned chefs, including Simon Rogan. These experiences shaped his approach to cuisine, emphasizing the importance of quality, innovation, and sustainability.
