Sirloin of Scotch Beef Steak by Guy Cowan at Guy's Restaurant

As an incredibly popular meat within the UK, Scotch Beef recipes are vast and varied. Ingredients

  • 340 gram Scotch Beef sirloin
  • Olive oil
  • Lemon juice
  • Salt and pepper
  • Port
  • Balsamic vinegar

Method

Have your Scotch Beef at room temperature, rub with salt and pepper and a little olive oil
Put on a hot grill and let it seal and sear.
Turn over, the Scotch Beef and squeeze some lemon juice over.
Pop into an ovenproof pan in a hot oven for a 2-3 minutes
Remove from oven and put on a plate.
Meanwhile deglaze the pan with some port then add a little, very good quality, balsamic and reduce by half.
Drizzle over the Scotch Beef steak and serve with some double fried chips and homemade onion rings.
Please do not overcook this Scotch Beef, it would be criminal.
