Boil the verjus and add the raisins. Cook until all liquid is absorbed. Cool
cook the butter to golden brown, pass and cool to warm.
Beat egg whites and sugar to stiff meringue.
Fold in the almonds, flour, butter and raisins.
Pipe in felxi moulds and bake at 170oc for 12-15mins until golden brown.
Remove and allow to cool.
Mix the icing sugar with the verjus and spread on the top.
