Stuffing
- 130g Sausage meat
- 45g Diced onion
- 40g Butter
- 20g Fine breadcrumbs
- 1tbsp Sage
- 20g Dried apricot (chopped)
- 20g Dried cranberries (chopped)
- Salt & Black Pepper
Stuffing
1. In a medium sized pan, melt the butter on a medium heat. Add the onions and cooked for 3-4 minutes until soft no colour.
2. In a bowl add the sausage meat, breadcrumbs, Sage, Apricots and cranberries. Mix in the butter and onions.
3. Mix well until fully combined.
4. Add a good pinch of salt and pepper to taste.
5. Prepare a large piece of tin foil, lined with a piece of baking paper. Add the mixed sausage meat onto one side of the baking paper to create a large sausage. Roll across to create a tight large cylinder.
6. Bake in the oven at 170°C for 10-15 minutes until just cooked.
7. Remove from the oven and slighty cool and cut into pieces and serve with your turkey dinner.
