Fig and apple jam

This fig and apple jam recipe goes lovely with terrines, especially chicken liver parfaits and pork terrines.

Ingredients

  • 24 figs
  • 4 cooking apples
  • 10 oz Demerara sugar
  • 2 tblspn golden syrup
  • teaspoon ground ginger

Method

Dice apples and sweat down until soft.
Dice figs add and sweat down again.
Add sugar, ginger and syrup cook until jam-like.
