- 400g Mixed Nutbourne Tomatoes
- 25g Basil
- 1pc Shallot
- 40ml Cold Pressed Olive
- 1tsp Red Wine Vinegar
- 20ML Basil Oil
- 10g Micro Salad Mix
- 1 pc Lemon

GRILLED SUSSEX MACKEREL WITH NUTBOURNE TOMATOES, BASIL & SHALLOTS
GRILLED SUSSEX MACKEREL WITH NUTBOURNE TOMATOES, BASIL & SHALLOTS - Serves 6
Ingredients
Method
1. Cut and Slice the tomatoes according to size and shape. Place onto a shallow tray
2. Peel and Slice the Shallot into fine rings.
3. Pick the basil and tare roughly.
4. Whisk the Olive oil and vinegar together. Season with salt, pepper and a pink of sugar.
5. Sprinkle the torn basil, shallot rings and dressing over the prepared tomatoes. Allow to marinade for 2 hours prior to using
6. Spoon the basil oil onto the plate.
7. Arrange the marinated tomatoes onto the plate. Dress with the shallots, torn basil and micro herbs.
8. Season the mackerel with olive oil salt and pepper
9. Cook under a hot grill. Finish with a squeeze of fresh lemon.
10. Place the mackerel om to the tomatoes and serve
