- • 50g Banana Puree
- • 50g Chopped Diced Bananas
- • 50g Sugar

Method
• Place the milk chocolate and cream together in a plastic bowl and heat in a microwave for 30 seconds. If the chocolate has not melted, heat at 10 second intervals until melted.
• Stir well to create a smooth emulsion.
• Make a direct Caramel with the sugar
• Stir in the Banana Puree to stop further colouring of the sugar
• Stir in the chopped diced Bananas
• Remove from the heat – allow to cool –
• Stir the Banana Jam into the prepare milk chocolate ganache
• Allow to set – serve
