The most popular recipe this month was Loin of Venison with black pudding puree, black pudding crumb, radish, Jerusalem artichoke crisps & hash and jerk salsify by Michael Wignall. A big fan of game, Michael will be cooking this dish on our live stage at The Professional Kitchen and Foodservice Show in Birmingham next week.

hospitality sleep over christmas

The most popular story on The Staff Canteen this month was an editorial discussing the lack of sleep hospitality staff get over the Christmas period. Back in 2016, bed brand Sealy published the results of a study into the impacts of sleep-deprivation in the workplace.  We conducted our own polls on our social media channels, and a whopping 72% of participants said that they get less than six hours of sleep a night!

Turbot, cauliflower and kohlrabi are among the produce in season this month. We've got a brand new seasonal update for you, where Koppert Cress have suggested the perfect garnish for some of the ingredients.

Member of the Month December 2018

Our Chef Plus Member of the Month for October is Shauna O'Keeffe. Shauna is the sous chef at Nautilus restaurant in Malahide, County Dublin. She was trained by a previous MOTM Alan Higgins and it is the only kitchen she's worked in so far!
