Tom Seller's set to open new restaurant inside 1 Hotel Mayfair
Tom Sellers, chef-patron of two Michelin star Restaurant Story in Bermondsey is partnering with the 1 hotel group for its first European property
The nine-story hotel set to house Tom's new restaurant is located overlooking Green Park and will be the perfect setting for the currently unnamed restaurant which will, according to BigHospitality, be a departure from the style seen at Story. As it will have an increased focus on sustainability, locality, and organic ingredients.
Tom said: “I look forward to bringing this new project to Mayfair. 1 Hotels’ unrivalled focus on sustainability and their innovative approach to hospitality is a natural fit with my own food ethos - by partnering with them together we can push the boundaries of zero waste, conscious creativity."

Along with the new restaurant, set to open in 2023 alongside the hotel, guests at the nine-story hotel, staying in one of the 181 guest rooms, will have access to a bar, a café, and a fitness and wellness centre during their stay.
The hotel is being developed in partnership with Crosstree Real Estate which was also behind hotel projects such as The Standard, London in Kings’ Cross, and Mama Shelter London Shoreditch and will be the first European property for 1 Hotels' portfolio.
A portfolio which already includes hotels in New York, Miami, and Los Angeles, and with plans for developments in Hanalei Bay, Nashville, San Francisco, Crete, Paris, Copenhagen and Melbourne. Some of which are already underway.
