Shay Cooper has left his role as chef patron of London restaurant Julie's and joined the five red AA-star restaurant at the Lanesborough hotel in London as executive chef.

Replacing Steeven Gilles, the once executive chef at The Goring will oversee the culinary direction of the entire hotel, which includes Michelin-starred Céleste.

In the span of his career, Shay has worked in some of the country's top kitchens, including Juniper in Altrincham, The Vineyard; the Endsleigh Hotel, where Shay helped achieve 3 AA-Rosettes and The Bingham, where he and his team earned a Michelin star in the 2017 guide

Welcoming Shay's move to The Lanesborough, managing director Stuart Geddes said:“We are delighted to welcome Shay to the team at The Lanesborough, where he will help to reinforce our culinary direction across the entire hotel operation," says Stuart Geddes, manager of The Lanesborough

"Shay joins a very united and strong kitchen brigade, and he will focus on bringing in innovation to enhance the culinary excellence that The Lanesborough has been globally renowned for since its opening in 1991.”
