Peter Avis replaces Fred Sirieix as general manager at Galvin at Windows
Peter Avis is the new general manager at Mayfair restaurant Galvin at Windows, replacing celebrity Maitre D' Fred Sirieix, who left late last year.
Peter was the general manager of Babylon at The Roof Gardens in Kensington until it closed in 2018, since which he has been doing consultancy work.
His experience in the industry is varied, having started off in the States, first in Miami, then as head waiter at MGM casinos in Las Vegas. A two year management course while working at the Royal Garden Hotel in Kensington was a stepping stone for him, and in 2001 he was offered a position at Babylon.
The restaurant confirmed that Peter has taken on the position at the Galvin brothers' Michelin-starred venue, replacing Fred Sirieix, who left in December last year after 14 years at the helm.
At the time, Fred announced the move on his Instagram account, where he said: "The time has come to say good bye to all my friends and colleagues after an incredible 14 years journey @galvinatwindows."
