Award-winning chef Nathan Davies is set to bring a fresh, exciting addition to Guernsey’s North Shore with the launch of his new restaurant, Vraic, opening this July.

The new restaurant promises to showcase the island’s rich and abundant produce, with a particular focus on its exceptional seafood and diverse array of seaweed species, all harvested from its coastline. 

Nathan Davies, the visionary behind former Michelin star restaurant, SY23 in Aberystwyth, brings his signature passion for fire-led cooking and foraging to this new venture.

Vraic will be a 25-cover restaurant offering a tasting menu for both lunch and dinner, embodying Nathan’s primal ethos.

The menu will also highlight the finest local and British food, with ingredients foraged and sourced from Guernsey and its surrounding regions.

A Basque-inspired, custom-built fire-driven grill will take centre stage in the open kitchen, designed primarily to cook whole fish and meat on the bone, perfect for sharing.

Each dish will reflect Nathan’s commitment to celebrating the island’s unique flavours and traditions, while also drawing on his Welsh heritage.

He said: “It was always going to take something very special for me and my family to leave Wales, but this new project is exactly that. Vraic represents a new opportunity to create something exciting on the island of Guernsey, a truly unique and beautiful part of the world.

“This restaurant will be a progression of our journey, building on the principles we established at SY23 - utilising the abundance of ingredients on our doorstep and cooking with fire at the heart of everything we do. I’m thrilled to be joined by some of the team from SY23, and I can’t wait to share this new chapter with everyone.”

From the food to the design, and the setting to the drinks, Vraic will celebrate Guernsey’s heritage and natural beauty.
