Current place of work, position and a brief overview of where you have worked before.

I am sous chef of Bridgestreet Lounge and Grill, Writtle in Chelmsford. I used to run West Street Vineyard before and worked in various kitchens in my past.

What is your cooking style and what can people expect from the food on your menu?

My cooking style is modern British cuisine, cooked simply and using the natural beauty of the ingredients.

What do you like about The Staff Canteen app and website?

I fell in love with The Staff Canteen a while back actually, it's where a lot of chefs old and young produce and show their creativity. We all work hard in this industry, so we are all winners in my book.

What is your favourite dish to cook?

Honestly, I haven't found it yet but my favourite items to cook have to be vegetables. As strange as that sounds, trying to get as much flavour from one item, and produce a dish from a single item cooked in different methods, is quite an achievement.

Guilty pleasure: list food item / dish / ingredient that aren’t considered ‘cheffy’ but you love to eat.

It would have to be our pastry chef's Parkin cake - I literally can't stop eating it and after this, she will probably find out it's me! That and a petrol station prawn sandwich - it's the only place open early hours of the morning after work!

What are your plans for the future?

I would love to eventually have my own pub, working every hour under the sun in something I truly believe in,  producing great quality service, products and atmosphere.
