East meets West in a collision of cultures and fusion of flavours at the new Hattusa Restaurant at Berwick Lodge Hotel in Bristol. Paul O'Neill Berwick Lodge Hotel 2MBCritically acclaimed Paul O’Neill starts as head chef, bringing with him a wealth of experience. Paul’s career began with a placement at Claridge’s in London and since then he has gone on to be awarded the prestigious Roux Scholarship in 2013 and reach the semi-finals of last year’s National Chef of the Year competition. Michel Roux Jnr said:“Paul is undoubtedly a great chef and an assiduous one at that but his unflappable nature along with his generous comportment make him the perfect Roux Scholar.” Paul will be looking to develop his already impressive CV. He said:“I am looking forward to introducing a fresh style of dining to Berwick Lodge. Hotel restaurants can often be overlooked, but my aim is to ensure that Hattusa gains an excellent reputation in its own right as well as being a sparkling jewel in this opulent hotel’s crown. “The hotel already has two AA rosettes but I am aiming to get a third this year, and maybe even a Michelin star in the future.” He added: “I am also hoping to introduce some new and exciting cookery courses at Berwick Lodge. I have a fantastic, enthusiastic team behind me who all share my vision so I am confident that together we can achieve this.” Berwick Lodge was bought by Fevzi and Sarah Arikan in 2004, and reopened in 2009 after the couple spent five years restoring the property. Their vision is to create a luxurious hotel and fine dining restaurant unlike anything else in the South West. Haddock and scallops Berwick Lodge now boasts five gold AA stars for accommodation, the only hotel in Bristol to have achieved this status. The opening of Hattusa marks the latest development at the hotel and continues the theme of East meets West running through the entire property. logo square Fevzi said: “I am originally from Turkey and so represent the East, while Sarah’s elegance and exquisite sense of style epitomise all the great things about the West.” Hattusa is the exciting new project at Berwick Lodge and, with Paul O’Neil as head chef, it is unlikely to disappoint. Hatussa will officially launch on October 23rd 2014.
