‘Emotional’ - Roy Brett’s Edinburgh restaurant Ondine to relocate in 2025

Roy Brett’s acclaimed Edinburgh seafood restaurant Ondine Oyster & Grill is set to close its doors at the end of this year, before relocating.

Due to ongoing structural works around the building on Edinburgh’s George IV Bridge, the restaurant would have been forced to close for a significant spell next year, so Roy has taken the decision to close Ondine in its current guise.

However, the plan is to reopen in a new venue in Edinburgh City Centre during 2025.

Ondine opened in Edinburgh in 2009, just off the Royal Mile.

Its final service will be the Hogmanay celebration on December 31.

A statement released by Ondine via their social media read: “We have had 15 amazing years here. Our decision to move wasn’t an easy one but we want to ensure Ondine’s customers enjoy the superior dining experience they deserve.

“In recent years this has been hampered by the ongoing works to the façade of the building that is occupied in part by Ondine.

“With no end in sight to these works, we have decided relocation is our best option, both for you and for us.

“2025 will be a very exciting and eventful year for us.

“We are looking forward to finding new premises in Edinburgh and we are so grateful to our team whose hard work, passion and dedication has made us what we are today.

“We also want to thank our loyal and incredible customer base. To every single one of you who has dined with us, your support means everything to us and we hope to see as many of you as is possible over the next seven weeks.”

“The next seven weeks will be emotional, but for the remainder of our time on George IV Bridge, Roy, Craig, Keri & Charlie look forward to welcoming you through our doors. Let's go out with a bang!”

It was recently announced that in February 2025, Roy will open a new venue at Seaton House.

The 40-bedroom luxury hotel overlooks the town’s West Sands Beach.

Roy won The Staff Canteen’s 2021 chef of the year award.

He started out at Caledonian Hotel, before heading to London to work with Mark Hix and Rick Stein and then launching Ondine.
