Duck & Waffle back in Hong Kong for one week pop up at the Ritz-Carlton

London’s Duck & Waffle returns to Hong Kong for a week long pop up at the Ozone restaurant of the Ritz-Carlton from September 26th to October 2nd.

 

After its roaring success at Taste of Hong Kong earlier this year, London’s Duck & Waffle is returning to Hong Kong. This time executive chefs Dan Doherty and Tom Cenci will be recreating their vibrant menu on the 118th floor of Hong Kong’s tallest skyscaper, at the Ozone restaurant of the Ritz-Carlton Hong Kong. At 1,608ft above sea level, Ozone is the highest bar in the world. 

The Duck & Waffle pop up will offer a dinner menu Monday to Friday, serving a mix of their signature British and European dishes like the eponymous Duck & Waffle (crispy duck leg confit, fried duck egg, and waffles with mustard maple syrup).  On Saturday, October 1 the pop-up will recreate the D&W 24-hour experience which Dan expects will be popular:

“Saturday, we start with breakfast, go into brunch, to dinner, into overnight and then back to brunch and we do the whole 360⁰. Hong Kong is more of a 24-hour city – bars are open til 5,6,7 in the morning and they’ve also got a great culture of going out drinking and stuff and then going to hit some dim sum places.”

Diners in HK will be able to enjoy a beautiful sunrise from the dizzying heights of ‘the most glamourous location in town’. There is also a raw bar at the Ozone so Dan and Tom plan to serve a few raw dishes. Dan also said that there will also be some surprises thrown in but he’s keeping those a secret for now!

“We don’t really want to try anything new out there because we want everyone in Hong Kong to get the London experience. There’s no point in us doing a load of new dishes because a lot of them won’t have been to the restaurant over here. We’ve got a strong following from Hong Kong, there’s a lot of social media over there and a lot of articles about us so it gives people the opportunity to try what we do but not having to fly twelve hours for it!”
