Chantelle Nicholson is set to open her new restaurant, Apricity, on April 12th 2022

Apricity - meaning warmth in the winter - will be located at 68 Duke Street in Mayfair, and will abide by the same sustainable ethos which has come to define her style of cooking, earning her a Green star in the Michelin Guide for Great Britain and Ireland 2021.

The New-Zealand born chef and former group operations director for Marcus Wareing Restaurants, whose venture at Tredwells in Covent Garden came to a close  earlier this year, said that the word Apricity "symbolises regeneration, warmth, generosity and light, which will be reflected in both the space and the menu."

The restaurant, she said, "will be a space where my team and I will work in alignment with the principles of a circular economy and a sustainable future."

With a hyper-seasonal menu - of which there will be three options, à la carte, tasting and vegetarian tasting - relying on ingredients from local suppliers and small-scale farms, the restaurant will be zero-waste.

As far as drinks are concerned, the wine list will feature an extensive selection of low-intervention wines, celebrating British vineyards. Cocktails will, like everything else on offer at Apricity, be zero-waste.

Chantelle said: “We can’t wait to hero the amazing growers and farmers within the UK, as well as partnering with other organisations that have an aligned ethos and culture. I am delighted to be working with Grosvenor Estates to create a greener, healthier and more conscious community within the heart of Mayfair, and beyond.”
